Turkey Glazed Meatballs

This was such a yummy meal. I didn’t want to be in the kitchen too long, so I made the meatballs with ground turkey. Turkey cooks so quickly.

Meatballs

glazing-meatballsIn a bowl, throw in your ground turkey, panko crumbs, finely chopped green onions, 2 eggs, salt, pepper, and mix. If you like green peppers, you could throw some of that in as well. Also, when it comes to seasoning, everyone has their preference. So feel free to throw in anything additional to make this recipe your own. I threw in 1/8 teaspoon of badia complete seasoning, 1/8 teaspoon of crushed red pepper and 1/8 teaspoon of garlic powder.  

After your mix is well seasoned, I added a dusting of flour under the mixture so it wouldn’t be too sticky. Now it’s time to start forming your meatballs. I used a spoon to measure the amount of ground turkey mix that would go into each meatball. You want to make sure each meatball is similar in size so they all cook evenly. 

When your meatball shaping process is over, throw your meatballs into a pan with already heated oil. If you prefer fresh garlic, you would throw in your chopped garlic into the oil as well. Once the meatballs are nicely browned, transfer them into a baking pan. Once in the baking pan, drizzle every your glaze of your choice. I used a spicy zesty glaze (orange juice, lemon juice, brown sugar, salt, pepper, and hot sauce). Bake in the oven for 25 minutes. (remember to mix your meatballs so each meatball is evenly coated with the glaze.)

Rice

I decided to pair my meatballs with rice.     homemade-rice-mix

You will need:

3 eggs (or use as many eggs as desired)

3 tablespoons oil

Salt & Pepper

1-2 green onion shoots, finely chopped.

 3 cups of cold cooked white rice.

fresh parsley

In a pan simply throw in your oil and green onions that are finely chopped. After a minute, add in your cold rice. After 10 minutes, making sure the rice is hot and onions are nicely mixed in, add your eggs. (I made eggs in another pan and through them into my rice mix). Let it cook for another 5 minutes and voilà! Your rice is all done to pair nicely with your glazed meatballs. After plating your rice and meatballs, add some fresh parsley as a garnish to tie it all together.
